Honey Garlic Green Beans


Green beans don’t have to be blah.  Mr. Stacy is not a fan of green beans.  If given a choice, he’ll go without vegetables, which is saying something from someone who still loves vegetarian cuisine from time to time.  However, when made with right amount of tang and flare, it meets with the approval of the husband and the most finicky of palates.

For our version, we used apple cinnamon bacon and awesome local honey to create a tangy sweet finish that wasn’t too sweet with a lot of tang.


Honey Garlic Green Beans

Serves 4

  • 1 lb fresh green beans
  • 1 minced shallot
  • 1 ground clove of garlic
  • 3 strips of bacon, diced
  • 1 C water
  • 1/4 C honey
  • Salt and pepper to taste

20171110_195158Put a medium pot on medium heat, cook the bacon until done.  Add minced shallot and garlic cook till soft, about 7 minutes.  While the shallots and garlic are simmering, snap the beans in thirds.  Once the shallots are cooked, add the water slowly, deglaze the pan slightly and add the green beans.  Let them simmer for about 10 minutes or till they reach desired tenderness.  Add honey, stir well.  Let simmer about 5 minutes or until the glaze thickens.

Serve hot.
